docs: Add blueprints
This is more or less just a draft, but I think that since most of the services are mostly APIs, there is not much to put into the containers/components layers.

SCHEDULED DOWNTIME: GitLab's virtual host must be rebooted to apply security updates. The reboot will occur on Saturday, 2024-11-23, between 03:45 and 4:00 AM.
