profiles.mask: Mask media-fonts/nerd-fonts

Complete Nerd Fonts has a lot of distfiles, most of which are never
used. Replaced with 'media-fonts/nerd-fonts-symbols' which only
installs NerdFontsSymbolsOnly. If additional fonts are needed, one can
copy and modify this ebuild.
